Our history

Our company has a history that dates back to the beginning of the 20th century, when Desiderio Morales decided to establish his business individually.

At the time, cheese making took place in close proximity to dairy farms, primarily due to the logistical challenges of transporting the raw materials.

Desiderio, with dedication and knowledge, paved the way for what would become a family legacy. It was during the next generation, his children, that they embarked on the creation of a cheese whose flower could read “Hermanos Morales.”

Although conditions were a little more favorable than in the previous generation, life in the cheese factory was not easy. The milk had to be collected in heavy jugs and then cooled in wells to prevent spoilage. During the nights, the milk was taken to the factory, which at that time was located in the heart of Tarancón, for subsequent processing and cheese making.

In 1980, the factory found its current home at 60 Adolfo Suárez Avenue, in the Tarancón industrial estate. The management of the business has passed into the hands of the third generation of the family, who have kept alive the tradition and passion for artisanal cheese making.

Over the years, we have modernized certain manual processes, such as the molding and pressing of cheeses, as well as the sanitization of milk, to ensure that we continue to offer high-quality products to our customers.

Today, we continue to make our cheese with the same care and love as in our early days, keeping alive the tradition that began with Desiderio and that has been passed down from generation to generation.

Our artisan process

Our artisan process

1º) Milk

Leche

1º) Raw sheep's milk is obtained (or mixed with pasteurized cow and goat milk)

2º) Maturation

Maduración

2º) Maturation, for at least two months, in the chambers of our facilities

3º) Curing

3º) Pure curing or with lard, fine herbs or extra virgin olive oil

4º) Enjoy

4º) After the entire process, our artisanal cheeses are ready to enjoy.
