In our cheese factory, craftsmanship is fundamental in the production of our products. Most of our cheeses are produced from raw milk, which gives them distinctive characteristics.
This milk comes from sheep that have enjoyed natural pasture without alterations. This is known as artisan cheese, and guarantees the purity and authenticity of our products, although we also offer pasteurized options.
SHEEP CHEESES
These cheeses are made with 100% pure sheep’s milk. After production, they go through a maturation process in chambers for at least two months.
We then offer curing options that include lard and herbs, extra virgin olive oil, or standard maturation with no additives.
MIXED CHEESES
These cheeses are produced from a mixture of cow, goat and sheep milk, which is pasteurized in our facilities.
The maturation time varies, which allows us to offer cured, semi-cured or fresh cheeses, adapting to various tastes.
APPELLATION OF ORIGIN
In addition, we offer a Manchego D.O.P cheese, which bears the Monte Morales trademark.
This cheese is made with 100% Manchego milk and meets all the requirements established by the Manchego Cheese Regulatory Council, ensuring exceptional quality.
