 Sheep’s milk cheeses are produced with 100% pure milk. Depending on the type of cheese, it may be aged in special chambers for a period of two months. Afterwards, and according to the taste desired, the cheese is then cured with lard and herbs or with olive oil.

 
     
     
     
     
     
     
     
     
           
           
                   
                   
                   
 

Blended-milk cheeses are produced with cow’s, goat’s and sheep’s milk that is pasteurized at our facilities. According to the amount of ageing desired, “aged” (curado), “semi-aged” (semicurado) or “fresh” (fresco) cheeses can be produced, with finished products weighing about 3 kg.

   
     
     
     
     
     
     
     
     
       
     
                   
                   
           
           
   

 

The production process is traditional and follows methods used in the region for centuries.
